Tamagoyaki
- Beat the eggs as for the omelette and add a little soy sauce
- Grease a wide pan with oil, let it heat up and pour a very thin layer of egg with soy sauce. It will coagulate very quickly. Roll with a spatula around the edge of the pan to make room for another layer of egg Pour a new layer of egg into the remaining space, roll it together with the previous layer that you have already rolled.
- Continue until you finish the composition. You will get a rolled pancake.Cut the pancake into thin strips
Vegetables
- cut the carrot into thin sticks and fry it in a pan with a little oil and a little water
- Clean the cucumber and cut it into sticks the same size as the carrot
- Clean the ginger and using the vegetable cleaner remove the thinnest strips possible.Marinate it in vinegar and sugar
Salmon, shrimp and tofu
- wash the salmon and remove thin strips. Marinate it in soy sauce
- put a little olive oil in a pan and cook the shrimps for two minutes, take them out and peel them.
- cut tofu sticks and fry for 10 minutes until browned on each side, in the same pan in which you cooked the shrimp
- Brown the sesame for a few minutes
Assembly
- Place the mat on a straight surface and the cloud sheet on top. Prepare a cup of cold water.After the rice has cooled completely, soak your fingers in the cup of water and sprinkle rice on the surface of the cloud sheet, leaving a free centimeter on one of the sides. Place it carefully using the tips of your fingers without pressing
- Place the ingredients in the combination you want and using the mat, roll until close to the free edge of the rice. Moisten well that centimeter left without rice and roll to the end
- Cut using a very sharp knife that you moistened beforehand. After each cut, wash it and moisten the blade of the knife
- To roll with the rice outside, it's more complicated and I think it's better to look for a video on YouTube, because it's hard for me to explain in writing
- Serve with wasabi and pickled ginger
